The Use of Image Analysis and Sensory Analysis for the Evaluation of Cultivar Differentiation of Freeze-Dried and Lacto-Fermented Beetroot (Beta vulgaris L.)

Abstract The aim of the research was to compare possibility distinguishing cultivars processed beetroots using image analysis technique and sensory evaluation. differentiation samples tested for freeze-dried beetroot ‘Czerwona Kula’ ‘Cylindra’, lacto-fermented ‘Cylindra’. textures from images quarters root slices, as well attributes evaluated by expert assessors, were determined. differences in means selected color spaces Lab, RGB XYZ different raw observed. ‘Cylindra’ discriminated with accuracy up 94.5% models built based on texture space RGB.
